Best Ever Meatloaf

2 eggs
2/3 C milk
3 slices bread, torn into pieces
1/2 C onion, chopped
1/2 C carrot, grated
1 C cheddar cheese, shredded
1 t parsley
1 t basil
1 t salt
1 t pepper
1-2 lbs meat loaf mix

Preheat oven to 350. In a large bowl beat eggs. Add milk and bread, let stand until liquid is absorbed. Stir in onion, carrots, cheese, and seasonings. Add meatloaf mix, mix well. In a shallow baking pan shape mixture into loaf. Bake for 45 minutes.

Topping
1/2 C ketchup
1/2 C brown sugar

Make topping while meatloaf is baking. Spread over loaf after the 45 minute baking time. Bake an additional 30 minutes or until cooked through.

Brown Rice Casserole

1 C white rice
1 can beef broth
1 can beef consume
1 medium onion, chopped
1 can of sliced mushrooms

Saute onion until clear. Mix with remaining ingredients and pour into a small casserole dish. Bake uncovered for 1 hour in a 400 degree oven.

Italian Sausage Spaghetti Sauce

2 lbs Hot Italian Sausage
3-28 oz cans tomato puree
6 cloves of garlic, crushed
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 T oregano
2 T basil
2 T parsley
1 tsp. baking soda
1/8 C olive oil
1/4 C Parmesan cheese
2 small jars of Alfredo sauce (we used sun-dried tomato Alfredo sauce, but any kind is good)

Remove sausage from it's casing. Saute in a dutch oven with pepper, onion, and garlic. Cook until sausage is browned, Drain grease. Add remaining ingredients. Simmer for 2 hours for best taste. We only waited one hour and it was delicious!!!

Serve over your choice of pasta. We used Linguini.

Oatmeal Scotchies

1 1/4 C all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 C (2 sticks) butter (softened)
3/4 C sugar
3/4 C brown sugar
2 large eggs
1 tsp vanilla
3 C quick or old fashioned oats
1 2/3 C (11 oz pkg) butterscotch chips

Preheat Oven to 375

Combine flour, baking soda, cinnamon, and salt in a small bowl. Beat butter, sugar, brown sugar, eggs, and vanilla in large mixer bowl. Gradually beat in flour mixture. Stir in oats and butterscotch chips. Drop by rounded Tbsp onto ungreased baking sheets.

Bake 7-8 minutes for chewy cookies, 9-10 minutes for crispy cookies. Cool on baking sheet for 2 minutes, remove to wire racks to cool completely.

PAN COOKIE VARIATION
Grease 15x10 inch jelly roll pan. Spread dough into prepared pan. Bake for 18-22 minutes or until light brown. Cool completely in pan on wire rack.
Makes 4 dozen bars.

Chicken Enchilada Casserole

3 Tbsp Butter
¼ C flour
1 C milk
½ c chicken broth
2 C cooked chopped chicken
¼ C chopped red bell pepper
1 (4 oz) can chopped green chiles
2 Tbsp dried taco seasoning
1 (8 oz) pkg shredded cheddar cheese
6 corn tortillas, halved
1/3 C chopped cilantro

Heat oven to 375. Grease 2 qt. casserole.

Melt butter in saucepan until it sizzles. Add flour, cook 1 minute over medium heat (stirring constantly).
Add milk and chicken broth.
Bring to a boil stirring constantly.
Add chicken, red pepper, chiles, and taco seasoning.
Cook to heat through (2-3 minutes)

¾ C mixture on bottom of casserole
4 tortilla halves
¾ C mixture
2/3 C cheese
Repeat

Bake for 20-25 minutes, until bubbly

Serve with sour cream and salsa.

Banana Muffins

This recipe is another one from the Chips. Mrs. Chip used to make these for breakfast for my friends and me at the sleepovers at their house. These are the BEST banana muffins I have EVER had!

½ C butter, softened
1 C sugar
2 C flour
2 eggs (separated)
1 tsp. baking powder
½ tsp salt
1 tsp soda-dissolved in 4 Tbsp milk
2 ½ large or 3 small bananas (mashed)
1 tsp vanilla

Beat egg whites until stiff-set aside

Cream butter and sugar. Add egg yolks then milk w/soda, mashed bananas, flour, baking powder, and salt. Add vanilla and egg whites last (fold in egg whites).

Spoon into muffin tins, Bake at 350 for 20-25 minutes.

Auntie J's Pumpkin Bread

This is one of my hubby's favorites from when he was younger. It is from his Great-Aunt Jeanette.

2 C canned pumpkin
1 tsp baking powder
1 C vegetable oil
1 tsp baking soda
3 C sugar
1 tsp clove powder
4 eggs, beaten
1 tsp nutmeg
3 1/4 C flour
2 tsp salt
1 tsp cinnamon

Mix ingredients and pour into 2 greased bread pans. Bake @ 350 degrees for 1 hour.
